Musicpb over at Flickr.com posted a recipe for his own version of pepper cheese spread – an adaption of a pimento cheese spread recipe from well-known chef Paula Deen (who is one of the more popular personalities on the Food Channel).
I’ve been given permission to post this recipe along with the accompanying photograph here at the Crossroads – with the orange of the cheese and the red from the bits of pepper or pimento, I have to say that this could make an excellent lunch or snack for enjoying the Summer Solstice!
by the way, I would definitely love to see musicpb come and cook for me – the photographs of all those breads and pies just makes my mouth water!

Musicpb’s Kicked-Up Roasted Pepper Cheese Spread
The following is an adaptation of Paula Deen’s recipe. I like to use jarred roasted red peppers because they have a better flavor than pimentos. I use all extra sharp cheddar because I like a stronger taste. I have also doubled her recipe.
6 ounces of cream cheese, room temperature
1 cup mayonnaise
4 ounces diced roasted red peppers
1/2 teaspoon black pepper, or to taste
1/2 teaspoon salt, or to taste
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
16 ounces grated extra-sharp cheddar cheese
1. Beat cream cheese until smooth and fluffy with an electric mixer.
2. Add mayonnaise, pepper, and seasoning and beat.
3. Add cheese and beat until well blended
Makes 4 cups
The following is Paula Deen’s original recipe from which the above was created. It’s a milder version that doesn’t have quite the same strong flavor, but it’s still quite delicious! Bobby is Paula’s son – you may have seen him on her show, and I think he and his brother have their own show on the Food Network as well.
Bobby’s Pimento Cheese Spread
1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/2 teaspoon House Seasoning, recipe follows
2 to 3 tablespoons pimentos, smashed
1 teaspoon grated onion
Cracked black pepper
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for vegetables or as a sandwich filling.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
