Apple Salad with Autumn Cider Dressing
Apple Salad
Autumn Cider Dressing, (below)
1 tart firm apple, cored and cut into 1/2 inches chunks
(I like Granny Smith, but use whatever apple you prefer)
3 cups (more or less) Romaine lettuce, washed, trimmed, torn into bite-sized pieces
1 cup arugula, washed & torn into bite-sized pieces
(you can use watercress or fresh spinach instead)
Crumbled or sliced/cubed cheese – this could be blue cheese, feta cheese, or goat cheese
3 tablespoons coarsely chopped walnuts or pecans
In a bowl, toss the apple chunks with 2 tablespoons of Autumn Cider Dressing. Place the lettuce and arugula in a large salad bowl and toss with the remaining dressing. Divide the greens among 6 salad plates, top with the apples and the crumbled or cubed cheese, then sprinkle with walnuts or pecans.

Autumn Cider Dressing
1/4 cup extra virgin olive oil
1 tablespoon apple cider
1 tablespoon cider vinegar
2 teaspoons freshly squeezed lemon juice
1 teaspoon Dijon-style mustard
1 garlic clove, minced
1/8 teaspoon crumbled dried thyme
Whisk all ingredients in a bowl until creamy.
